Tea Table Spotlight ~ A Nice Green

I wanted to highlight what I have found to be one of the nicest loose green teas on the market.

To begin with, I should mention that I was not naturally enamored of green teas. They were something I tried to get down regularly more for health reasons... rather like vegetables. Since I had a hard time with that "grassy" flavor, initially I drank a lot of flavored green teas. Throw in a little peach or ginger or citrus, and I could get through a large mug of the stuff. But I am also a purist at heart, so continued to search for a green that I could contentedly sip au naturale (the tea, not me personally.) I think I have found it.

SpecialTeas offers a lovely green tea bearing a slight mouthful of a name... China Fine Lung Ching Organic. What a pleasant surprise! The inherent sweetness of this tea goes a long way to mellowing any grassy flavor. The appearance is a tad different from other teas, as it is hand-processed in such a way as to preserve its flat leaf shape. If interested in trying an attractively-priced sample, here is the link.

Greens (and whites as well, while we're at it) are often rejected by newer sippers due to oversteeping. This will guarantee a flavor and scent reminiscent of the residual mulch on the underside of one's lawnmower. Manufacturers' packaging will often provide hints for appropriate water temperature and steeping times, but in general these teas should be steeped in water 160F to 180F degrees and for no more than three minutes.
